Why should I not install flooring under my kitchen?

Kitchen fittings (kitchen cabinets and kitchen island, etc.) should not be placed directly on the floor as this creates fixed points in the floating installation and thus prevents the floor from moving with fluctuations in the indoor humidity. Wood is a hygroscopic material that adapts to ambient humidity. The Northern European climate means that we have high humidity during the summer months (= the wooden floor expands) and low humidity during the winter months (= the wooden floor contracts). By creating fixed points in the floor, this movement is prevented from happening naturally and there is a risk of problems with wooden floors in the form of large gaps between the planks.

It is therefore usual to lay floors up to the legs of the kitchen fittings and then put a socket on the cabinet legs. Alternatively, you can lay the floor and then drill holes for the cabinet legs so that the kitchen fittings rest on the subfloor. Fridge / freezer / dishwasher and stove / oven etc. must, however, be on the floor.
